As of January 1, 2019, category 1 and 2 establishments shall be under the operational controls of a person in charge. A person in charge shall be on the premises at all times food is handled, prepared, or served. All employees who are designated a person in charge shall have a current ANSI accredited Certified Food Protection Manager.
Allergen Awareness Training for Illinois - $14.95

All certified food protection managers (CFPMs) working in a restaurant must complete additional allergen training using an approved allergen awareness training program.

The state of Illinois also requires establishments to keep certificates of allergen awareness training on-premise and available to the health inspector upon request.
The Certified Food Protection Manager course (CFPM) educates managers and staff according to the FDA Food Code. Learning these concepts will help control the cost and risk associated with foodborne illness and provide important preventative measures for keeping food safe.
This course is offered in two formats: instructor-led (classroom and private instruction) and online.

Food Safety Manager Class Details
8 Hour Certified Food Protection Manager Course
Safe Food 101 provides instructional training and proctoring of the Certified Food Protection Manager Course. Safe Food 101 uses the ServSafe® Food Manager ANSI approved nationally accepted training materials and online test nationwide, including Illinois and Missouri.
The required minimum class length in Illinois is seven hours of instructional training and minimum of one hour to complete the exam. My class length is 7.5 hours and ServSafe provides the examinee 2 hours to complete the exam. This does not including breaks or lunch.
A photo ID is required prior to taking the exam, acceptable forms of identification are state issued drivers license, state ID, military ID, school ID, military ID, valid passport or a U.S. green card.
All classes are proctored online using a computer or tablet allowing the for immediate pass/fail results. Upon successful completion of the class and exam, the student may review test scores and print the ServSafe Certificate. Safe Food 101 does NOT guarantee computers for test taking; however, does provide extra on hand for emergency situations, such as browser compatibility issues. It is the student's responsibility to bring their own computer for taking the test online. Please refer to the hardware and software requirements for the online test. Please don't hesitate to contact Safe Food 101 is you are in need of certification and have no resources to borrow a computer or tablet. Some of the newer phones are compatible for taking the exam on.
As an instructor, I know that everyone learns differently. Therefore, I use a variety of resources available to me to deliver the material such as video, PowerPoint slides, interactive multiple choice questions, what do you think scenarios, and quizzes consisting of True & False, Multiple Choice, Matching, and Fill-in-the-Blank questions which are done as a class. I will also email each student/supervisor additional study materials such as the Top 6 Pathogens, Cooking Time & Temperatures, any changes in the food code, and more multiple-choice review questions with answers. I try to provide as much material before class to help prepare the student for success.

Textbooks
The ServSafe Manager Book 7th Ed. textbook is not required for classroom or online instruction; however, I highly recommend reading the textbook prior to class. Students who have purchased, read and completed the review questions at the end of each chapter tend to have higher test results. If you are new to the industry or have never had a food safety and sanitation class the volume of information taught in seven hours is a lot to absorb and if you are a veteran to the industry, it is a great way to brush up on important concepts. If you are a manager, trainer or hold any supervisory position, the textbook is a great tool to use for continued education, training of current and new staff and keeping current on food safety topics.

Beginning January 1, 2018, an ANSI accredited Certified Food Protection Manager (CFPM) certification obtained through a course and passing the exam are still required, but students will not need to apply for the additional Illinois FSSMC certificate. FSSMC Certificate Fee – Illinois Effective January 1, 2018, per PA 100-0194, the Illinois Food Service Sanitation Manager Certification (FSSMC) was eliminated. IDPH - Illinois Department of Public Health no longer issue FSSMC certifications, post course listings, or certify instructors/proctors.

Learn the basics of food safety, personal hygiene, cross-contamination, time and temperature, cleaning and sanitation and more. The food handler course is an Internet-based course that takes a couple of hours and your Food Handler Card can be downloaded after successfully completing the online exam. Do not buy the Food Handler Training if you hold a valid Certifed Food Protection Manager Certificate pursuant to current food safety lawfor the State of Illinois.
Food handlers working in restaurants and non-restaurants shall have complete food handler training within 30 days of employment if the individual does not hold a valid CFPM - Certifed Food Protection Manager Certificate. Food handlers working in a restaurant or non-restaurant according to the Illinois food code must pass the food handler course that is ANSI approved. IDPH defines a restaurant as concessions and other food service establishments where food is intended for immediate or on-site consumption. Persons working in non-restaurant include facilities such as nursing homes, licensed day care homes and facilities, hospitals, schools, long-term care facilities, and retail food stores. Certificates are good for three (3) years.
